
Where does the time go? I've been so preoccupied lately. My husband was out of town for 10 days. My oldest daughter left for a trip to Israel. She's there through the 31st so I would appreciate your prayer for her. I've pretty much had my mind on things other than my blog.
But, it's Wednesday again and time for another installation of All In A Day. Can't pass that up. One of these days (maybe next week) I'll have my act together enough that my post will go up first thing Wed. morning. Ha! We'll see.

We've all been there. You get so engrossed in something, next thing you know, it's 5:00 pm and you haven't any idea what to fix for dinner. Or, you've been out all day and come home just in time for dinner prep and it HAS to be fast or the children will start helping themselves to something sugary.
This happened to us recently. We went to the Everglades all day, got home at dinner-time and I had not set out anything to thaw or put anything in the crock-pot. On the way home, I stopped to buy some chicken breasts for this recipe. It's fairly quick and the children can make a salad while it's cooking.
Chicken Parmesan
6 large chicken breasts, boneless, skinless (sliced in half through the middle so you have about 12 pieces)
1-1/2 cup dried bread crumbs (can use packaged or homemade)
1 cup parmesan cheese
1-1/2 tsp. oregano
1-1/2 tsp. garlic powder
1/2 tsp. basil
1-1/2 tsp. parsley
1/4 tsp. black pepper
3/4 cup butter (salted)
Mix dried ingredients for breading. Melt butter. Dip chicken in butter, then in breading. Place in buttered baking dish with edges touching. Bake at 350 degrees F until breading is nice and browned and crispy-looking, approx. 20-25 minutes.
This recipe is from the MOMYS Cookbook. I contributed several recipes to this book and I bought one for each of my children way back when it was published. It is one of my favorites. (But, I think it was about half that price when it first came out.)
Another good, quick meal is omelets. You can use the packaged sausage crumbles and some diced vegetables for added flavor. Breakfast for dinner is always quick and fairly simple.
Pancakes is also a quick fix and popular.
One of my family's favorite pasta dishes is an alfredo sauce with penne. Here is the recipe. My children refer to it as Green Sauce Noodles. Sometimes I add cooked chicken to this, mix it all together and bake in a casserole dish.
Pasta with Alfredo Sauce
A box of your preferred pasta, penne or rotini work well
For sauce:
Three jars of prepared alfredo sauce
Two packets of dried pesto mix (McCormick is one brand)
1/2 cup sour cream
1/2 cup heavy cream
1/2 cup grated parmesan cheese
Mix all the sauce ingredients together in a pot and heat on the stove. Boil the pasta according to the directions on the package. Drain the pasta and serve the sauce over it. I usually fix this with a salad and garlic bread.

This is really making me HUNGRY! :) I think your Chicken Parmesan sounds wonderful, and I will definitely be giving that a try . . . maybe tonight!!! :) What do you serve with it? I'm thinking I'd go with fettuccine noodles with butter and parmesan cheese and a salad!
